I, Jennifer Kassel, have been running Diamond Head Shave Ice since the summer of 1991. I started doing the business as a means to pay for college. Upon graduation, my mom had started our family business, the Chehalis Mints Co., which I joined up with. During the summer, the chocolate business slows down just enough to allow me to continue the shave ice business. I have been doing it many more years than ever thought. I have enjoyed watching kids and families grow along with building life long friendships over the years. This business has also been good way to raise kids and teach them work ethic in a wonderful environment at the Olympia Farmers Market and along with all its wonderful vendors and staff.
