Squash Apple Linguini
A cozy and flavorful winter pasta dish featuring locally grown produce from the Olympia Farmers Market! Roasted butternut squash, apples, and sausage come together with fragrant herbs for a simple yet satisfying meal.
Ingredients:
- 1 butternut squash, cubed (Roots and Fruits) (or substitute any creamy squash)
- 2-3 apples, cubed (Fresh Approach)
- 1 onion (or 2-3 shallots), chopped (Maisy Moon)
- 2-3 sausages, torn into bite-sized pieces (Stewart’s)
- 1 tbsp rosemary
- 1 tbsp thyme
- Olive oil
- Linguini
- Salt & pepper
Instructions:
- Roast the vegetables & sausage: Preheat oven to 415°F. Spread squash, apples, onion, and sausage on a baking sheet. Drizzle with olive oil, then sprinkle with rosemary, thyme, salt, and pepper. Roast for 30-40 minutes until golden and tender.
- Cook the pasta: Bring a large pot of salted water to a boil. Cook linguini until al dente (8-10 minutes). Reserve 1 cup of pasta water, then drain the rest.
- Combine & serve: Drizzle the cooked pasta with olive oil, then toss with the roasted vegetables, sausage, and reserved pasta water until well combined.
